Our Favorite Refreshing Summer Drinks

    There’s nothing quite like an ice-cold beverage on a hot summer day, especially when living in St. George. With temperatures reaching well over 100 degrees on an average day, the heat can often be unbearable, and, quite frankly, miserable. To prevent over-heating, we’ve fished out some of our favorite refreshing finds. From a classic Pina colada to a health-conscious superfood smoothie, there’s something for everyone to enjoy.

     

     

     Virgin Pina Colada

    • 2 cups pineapple juice
    • 3/4 cup cream of cocount
    • ice
    • pineapple wedges for garnish

     

    Pour the pineapple juice and cream of coconut into a high-powered blender. Add enough ice to reach the level of the juice. Blend until smooth.

    Pour into 2-3 glasses and garnish with pineapple wedges

     

     

     

    Fresh Peach Lemonade

    • 6 cups water
    • 1/3 c raw honey
    • 1 c freshly squeezed lemon juice (approx. 4-6 large lemons)
    • 3 c chopped peaches
    • 2 C homemade lemonade (see below)

     

    Lemonade:

    Combine water with honey and cook over medium heat until honey is dissolved. Remove from sauce pan and let cool. Set aside.

    Add squeezed lemon juice to the bottom of pitcher, followed by honey syrup, then fill remainder of pitcher with cold water. Stir and set aside.

    Peach Mixture:

    Add diced peaches to a sauce pan and heat over medium-high heat. Stir occasionally until peaches become soft and liquid.

    Transfer cooked peaches to fine mesh sieve and press to get strained peach juice.

    Add 1/4 c of peach juice to the glass and fill to the top with lemonade recipe.

    Add ice.

     

     

     

    Super Food Carrot, Ginger and Grapefruit Juice

    • 2 c chopped grapefruits (peel and pith removed)
    • 5 chopped carrots
    • 1 in. fresh ginger, peeled & chopped

     

    Press grapefruits, carrots and ginger through a juicer. Stir and refrigerate

     

     

     

    Green Goddess Smoothie

    • 1 medium banana
    • 1/2 c sliced strawberries, blueberries or chopped mangos
    • 1/4 c 2% greek yogurt
    • 1 T almond butter
    • 1/2 baby spinach
    • 1/2 c unsweetened almond milk
    • optional: 1-2 basil leaves, 2-3 mint leaves, 1/2 tsp peeled, chopped ginger

     

    Place all ingredients in a blender. Blend until smooth

     

     

     

    Rosemary Grapefruit Soda

    • 2 leg strips grapefruit, zest
    • 2 leg sprigs fresh rosmary
    • 1/4 c. honey
    • 3/4 c cane sugar
    • 1/4 c fresh grapefruit juice
    • 2 parts grapefruit juice
    • 3 parts sparkling water or soda
    • 1 c water

     

    Heat water, sugar, honey and grapefruit juice in a medium sauce pan over medium heat. Stir occasionally until sugar has completely dissolved.

    Add grapefruit zest and rosemary and let simmer for 5 minutes. Remove from heat and let seep for up to an hour.

    Strain through a fine-meshed sieve in a glass jar and chill before serving.

    To Serve:

    Serve in a highball glass with ice. Add rosemary syrup and fresh grapefruit juice. Stir and top with soda or sparkling water

    Garnish with grapefruit slices and/or a sprig of rosemary

     

     

    Kid Favorite: Orange Creamscicle Smoothie

    • 1 frozen banana
    • 1 orange peeled and seeded
    • 1/2 c almond milk
    • 1/2 c ice
    • 1 tsp vanilla extract

    Add all ingredients to a blender and process until smooth
